A boutique, family-run winery, St Winifred’s is situated on picturesque Lake Nillahcootie, nestled in the foothills of Mt Samaria.
Established in 2004, St Winifred’s was willed into reality by principal winemaker Cait Codyre, with husband Peter, three children and two dogs as willing and able assistants.
With a focus on home grown and local produce paired with traditional wine-making methods, St Winifred’s employs an authentic, holistic approach to wine production.
The fermentations are long and cool to extract maximum fruit character, and the wine is ages on lees to allow a slow and gentle maturation. St Winifred’s uses the highest quality cool-climate grapes from their own, as well as other local vineyards, to produce their range of wines.
Whilst the methods and traditions of St Winifred’s have evolved over time, the age old favourite technique, the bare-foot barrel stomp, has remained a firm favourite in the memories of Codyre participants. Some might call this a favourably inclined retrospect; at St Winifred’s they call it embracing the family experience.
